Retrieve a checkout session by ID.
Returns the full checkout session details including status, contract preview, billing estimates, and configuration. The checkout must belong to the organization.
Response includes:
- Checkout status and metadata
- Contract preview (if available)
- Billing estimates (current and next invoice)
- Product quantity overrides
- Expiration and redirect URLs
